Store bought tortillas tend to crack causing the bean juice to run down your arm. Soft flour tortillas are easy to make once you get the hang of it.
- 6 cups flour
- 1 teaspoon salt
- 1 teaspoon baking powder
- 3 tablespoons oil
Mix the dry ingredients together in a medium size mixing bowl. Make a well in the middle of the flour mixture and pour in the oil. Mix it up until the oil is distributed all through the mixture.
Pour in 1/2 cup of very hot water and stir the mixture up. Add another 3/4 cup of hot water and stir. The dough should have the same consistency as bread dough.
Knead the dough until it is soft and smooth. Put a little flour on the counter and put the tortilla dough on top it and then cover the dough with the mixing bowl. Let the dough rest for about a half an hour.
Turn the dough out on a floured board and knead the dough until it becomes a smooth ball. Add just enough flour to keep the dough from sticking to the board and to your hands, but not much more than that. You don't want the dough to become dry. Knead for about 2 to 3 minutes.
Cooking the tortillas:
Heat a skillet on a medium high heat. Pinch a two-inch ball of tortilla dough. Flatten the ball with your hands. Sprinkle a little flour on the counter and roll the dough out very thin. Brush any extra flour off the tortilla and place it on the dry skillet. As it cooks it will bubble up. Let the tortilla cook until it is lightly flecked with brown spots. Flip the tortilla and let it bubble up and cook on that side as well. Remove from heat on place on a plate covered by a damp towel.
